A smokey sauce smothering a tender salmon filet is just the perfect weeknight dinner to fill you up! This lean and green dinner is a healthy version of a creamy Poblano Sauce over Salmon!
I like to top it with fresh mango pico or sweet pineapple salsa for a sweet and smokey combination that you won't be able to resist. Let's make some creamy poblano sauce!
What Is A Poblano Pepper?
A pepper grown in largely in Mexico, the poblano pepper is fairly mild and can be enjoyed cooked or raw!
They are usually roasted and can be blended into sauces, stuffed, or served in fajitas!
You can usually find them at your local grocery store and I don't have any issue finding them. They are less spicy than a jalapeño and pair perfectly with this salmon dish!
Creamy Poblano Sauce and Salmon
This is a simple sauce to make in the food processor and pour it right over some pan-seared salmon. It's done in 30 minutes and my family cleaned their plates!
- 4 portions of salmon
- 1 poblano pepper
- 1 shallot
- cumin
- chili powder
- garlic powder
- salt
- pepper
- garlic
- 1 cup greek yogurt
- ¼ cup cilantro
- 1 cup pepper jack cheese
- 1 cup mango pico de gallo or pineapple salsa (really any sweet salsa will work!)
How To Make Poblano Sauce
This easy smother sauce comes together in the food processor and instead of roasting the peppers, we are going to pan-sear them!
It speeds up the process and is less mess; which means less clean up!
- Sprinkle the salmon with the cumin, garlic powder, salt, pepper, and chili powder.
- Over medium high heat, sear the salmon on each side for 5-7 minutes.
- Remove and set aside.
- In the same skillet, add 1 tablespoon of olive oil and the diced shallot and poblano pepper. Sautée for 3-5 minutes until tender.
- In the food processor add the yogurt, cilantro, pepper jack, garlic, and the poblano mix.
- Blend until smooth, about 1 minute.
- Pour the sauce over the salmon and top with your choice of salsa.

Substitutions
There are a few things you can sub into this Creamy Poblano Sauce with Salmon to make it more indulgent or to lighten it up.
Swap cream cheese or sour cream for the greek yogurt.
Swap white or yellow onion for the shallot.
Swap in shrimp or tilapia for the salmon.
Serve It With

This is one of my new favorite ways to cook salmon! The flavor was great. I did grill the salmon instead because I couldn't fit it all in one skillet. The salmon, poblano sauce and pineapple salsa went together perfectly.
