When we can’t be on the beach, sipping mojitos and margaritas from our own backyard is the next best thing. While it won’t completely transport us to a tropical island with warm sand between our toes and the sound of waves hitting the shore, we’ll feel like we’re almost there. 

I’m thrilled to share my take on a timeless cocktail: a blended coconut mojito. During the sweltering summer months, when we’re all looking for ways to cool off, this is my go-to. With frozen pineapples, creamy coconut milk, and fresh mint and lime juices, think of this refreshing cocktail as a classic mojito with an island twist. Mojito de coco: the dreamy blend of a mojito and a piña colada!

Elevate your frozen coconut mojito into a full-blown rosy moment with these creative serving ideas:

  • Tropical Brunch Bash: Serve these frosty mojitos in chilled coupe glasses rimmed with toasted coconut. Add a wedge of pineapple and a tiny sprig of fresh mint for that just-back-from-vacation vibe.
  • Poolside Happy Hour-  Pour into tall, frosty glasses and float a thin pineapple slice on. For an extra-refreshing twist, swap the coconut milk for coconut water — lighter, slushier, and ideal for the hottest days.

Some solid white and silver rum options are Havana Club Anejo Blanco, Bacardi Silver, Port of Entry Rum, or Mount Gray Eclipse Rum.

Frozen Pineapple - Sweet and fruity, pineapple is the core of this tropical drink. Adding a subtle tartness that offsets the creaminess of the coconut milk and citrus of the limes, the pineapple will make this coconut mojito tangy without being too overwhelming.

Coconut Milk - Coconut milk is a necessity! Not only does it make the drink smooth and creamy, but it also provides a nice sweetness that complements the tart pineapple. For extra creaminess and sweetness, opt for sweetened cream of coconut. 

Limes - Fresh lime will pack a punch of citrus, elevating this refreshing cocktail to star status.

Agave - Agave gives a natural, fruity sweetness without too much sugar, and balances the strong pineapple and citrus flavors of the drink.

Mint Leaves - Mint is key to making the coconut mojito cooling, refreshing, and full of flavor. Without mint, a mojito wouldn’t be…well, a mojito!   • Coconut Water. Not keen on overly-creamy blended drinks? Swap out the coconut milk for coconut water instead to thin out the consistency.
  • Sweetener. This recipe calls for agave as a sweetener, a light, fruitier, and more natural option. But you can also use a traditional simple syrup or maple syrup.
  • Fruit. If you’re not a fan of pineapple, don’t worry! You can use a variety of other fruits to make the mojito of your dreams — a mango, blueberry, or strawberry mojito — the choices really are endless.

  1. Step 1: In a high-powered blender, combine the frozen pineapple, coconut milk, rum, lime juice, agave, mint leaves, and ice.

  1. Step 3: Pour into 4 chilled glasses.
