Easy Blended Coconut Mojitos
Be transported to a tropical island with just one sip of this delicious Coconut Mojito! Blended with creamy coconut milk and tangy frozen pineapple, this is the lovechild of a traditional mojito and a piña colada. The best part? It only takes 4 steps to make!

- 2 cups frozen pineapple chunks
- 1 cup canned coconut milk full-fat for creaminess
- 8 oz white rum
- 2 oz lime juice
- 2 tablespoon agave
- ¼ cup fresh mint leaves plus extra for garnish
- 2 cups ice
- a splash of coconut water if it’s too thick optional
- Toasted coconut flakes for garnish
- Wedge of Pineapple or lime wheel for garnish

In a high-powered blender, combine frozen pineapple, coconut milk, rum, lime juice, sweetener, mint, and ice.
Blend until smooth and frothy. Add a splash of coconut water if needed to create the perfect consistency.
Pour into chilled 4 glasses.
Garnish with a mint sprig, a wedge of pineapple, or even toasted coconut flakes!

- Blend until smooth. Make sure you blend the ingredients thoroughly until silky smooth to avoid unnecessary and unwelcome chunks – no fun!
- Adjust consistency and sweetness to taste. Too thick and creamy for your liking? Add some coconut water to thin it out without losing its coconut flavor. Not sweet enough for your preferences? Blend in more agave.
- Chill the glasses. Pop the glasses into the freezer while you’re making the mojitos to keep them cool. This will keep the blended mojito from melting after being poured.
- Serving size. This recipe serves two. Double or triple it to serve up 6 or 8 people.
