Having a dinner party? Or maybe need a hearty appetizer to serve up to friends and family? This Creamy Parmesan Mushroom Toast is a comforting combination of salty parmesan, earthy mushrooms, and served on a toasted baguette. Perfection!

What Is Mushroom Toast?

The best creamy mushroom toast recipe really contains the most simple ingredients. Which is my favorite type of recipe.

Inherently simple ingredients come together to create something truly special!

Mushroom toast is a delectable and rather unique side or appetizer. It takes onions, parmesan, and garlic whipped together to form the most delicious sauce and top it with mushroom reduced with balsamic vinegar.

It's the perfect accompaniment to a steak, salmon, or even these blackened scallops!

Ingredients To Make Mushroom Toast

Our creamy mushrooms on toast starts with these few simple ingredients, most are even pantry staples!

Baguette
2 cups Mixed Mushrooms
¼ cup Parmesan
3 cloves Garlic
3 tablespoon Olive Oil + ¼ cup 
2 Yellow Onions, diced 
¼ cup whole milk
dried thyme
balsamic vinegar
salt 
pepper

How To Make Mushrooms on Toast

Only a few minutes of sautéing stand between you and creamy garlic mushrooms on toast!

Add the olive oil to a skillet over medium high heat.
Saute the diced onions for 2-3 minutes until translucent.
Add in minced garlic and saute for 1 minute untl fragrant.
Turn off the heat and stir in milk and parmesan cheese.
Transfer this mixture to a blender or food processor and slowly add in the ¼ cup olive oil blend until smooth. Set aside.
In the same pan over medium high heat, add another tablespoon of olive oil.
Add the mushrooms and cook for 2-3 minutes untl they begin to release some of the moisture.
Stir in thyme, salt, pepper, and the balsamic vinegar. 
Continue cooking the mushrooms until they reduced by half. About 10-15 minutes. 
While those cook, slice the baguette and drizzle with olive oil.
Broil the slices of baguette for 1-2 minutes until toasted and brown.
Once the bread is done, spread the creamy onion puree on each slice.
Top with the mushrooms and enjoy! 

The best bread for toasting, in my opinion, is a long French baguette. I love the smaller slices so people can enjoy a few of these two-bite mushroom appetizers.

Optional Mushroom Toast Toppings

Other things that would absolutely delicious for mushrooms on toast include...

  • fresh basil leaves
  • oregano leaves
  • a drizzle of truffle oil
  • sun-dried tomatoes
  • extra parmesan cheese

Mushrooms are super earthy so anything with a little extra "zing" would be delicious too! Think balsamic glaze or even lemon zest!

There are so many versions of mushroom toast that there is surely something to add that anyone could enjoy.

Recipe Tips and Tricks

After testing this recipe a few times there are a couple of things I'd recommend doing for the best outcome!

Keep the heat low and slow when cooking the onions and garlic. This will ensure the onions really caramelize nicely and you don't burn the garlic.

When blending the onions and parmesan mixture, slowly drizzle in the olive oil! The slow drizzle while blending will allow this mixture to emulsify (aka get thicker and stay together) and not be an oily mess.

Make the parmesan cream and the mushrooms ahead of time! You can prep these two things up to a day in advance and simply toast your bread & warm up the mushrooms before serving.

FAQ

How To Store Fresh Mushrooms - Begin by removing them from any packaging they came in. I like to pat them dry with paper towels and store them wrapped in dry paper towels and keep them in a plastic bag in the fridge.

How Long Will Sautéed Mushrooms Last? If you keep these cooked mushrooms separate from any dairy products and meats, these sautéed mushrooms should last up to 7 days in the fridge!

Can You Freeze Cooked Mushrooms? While I don't make a habit of this, you definitely can! Place the room temperature cooked mushrooms in a thin layer in a freezer ziplock bag and freeze! They can be stored this way for up to a year!
