Easy Mango Salsa
The star of the show for these simple fish tacos is the easy-to-make mango salsa. It's a chunky, chopped salsa that comes together very quickly and can be served with many different Mexican dishes.
Here's how to make it!
- 1 ripe mango, diced
- ½ an onion, diced
- 1 Roma tomato, diced
- ¼ cup of chopped cilantro
- ½ a jalapeno, diced and seeded
- pinch of salt and pepper
- lime juice
- red onion
- Finely chop all ingredients
- Mix in a large mixing bowl with a pinch of salt, pepper, and lime juice.
- Refrigerate for 10-30 minutes for the best flavor!
Prep this ahead of time and enjoy on your easy homemade fish tacos.
Pan Seared Cod Fish
So to cook our fish we are simply going to pan-sear it! It is done very quickly and can be used for any white fish of your choosing.
Season the fish with the seasonings listed in the recipe or opt for a taco seasoning! Sear each side for 3-5 minutes until the fish is cooked to an internal temperature of 143 degrees Fahrenheit.
Shred and enjoy!
Corn Or Flour Tortillas?
This is a dividing topic in my household! I love the flavor of a fresh corn tortilla. However my husband is a die-hard flour fan.
This is a personal preference but if I was serving this to a crowd I might opt for flour tortillas. Here's why...
Corn tortillas, while delicious, get soggy very quickly. They can easily fall apart if not properly heated up and kept warm.
Serving these rather moist fish tacos on a flour tortilla creates less space for a taco disaster! You want to keep all the filling in the taco.
