My mom famously makes this amazing, creamy, indulgent corn dip that you could easily crush the whole bowl by yourself. My whole family loves it and I just knew I could lighten this up. So, you know I'm a fiend for Trader Joes Cashew Fiesta Dip and it has come to save the day once again.

Check out the recipe for Skinny Mexican Corn Dip below! This easy appetizer will be a new favorite for sure. It goes perfectly with my Skinny Spicy Margarita recipe!

I mixed it up with some tangy greek yogurt, corn, shredded cheese, and black olives. OMG, you guys need this recipe in your life. It kind of reminds me of a Mexican version of Pimento Cheese in a way...nothin wrong with that!

This easy appetizer dip is perfect for pool parties, birthdays, game days (check out my game day menu here!), and even regular ole weeknight dinners! It's cold, light, and healthy. So let's make it!

How To Make Mexican Corn Dip

This Mexican corn dip is an awesome recipe for kiddos to help with because it's just a one-bowl recipe. Everything in the mixing bowl and give it a stir!

A few key ingredients to achieve the Mexican corn dip signature flavors include Rotel, corn (obviously), and the cashew fiesta dip! You really don't want to skip that ingredient!

Mexican corn or Mexicorn can be found by the salsas in most grocery stores. Its a mix of corn and bell peppers and just adds a little extra flavor!

Rotel is a mix of tomatoes and chiles that really pack that Mexican flavor into the dip.

Cashew Fiesta Dip from Trader Joes is a cashew-queso that REALLY tastes like queso but without the guilt!

All 3 of these are essential to this easy appetizer corn dip!

Mexican Corn Dip Ingredients

  • 2 cans of Mexican corn or regular corn
  • 3 cups plain greek yogurt
  • 1 container Trader Joes Cashew Fiesta Dip
  • 2 green onions
  • 1/2 cup chopped black olives
  • 1 cup shredded cheddar cheese
  • 1 cup rotel drained

INSTRUCTIONS 

  • Combine all ingredients in a mixing bowl
  • Let it chill in the refrigerator for at least 30 minutes
  • Serve with veggies such as peppers & cucumber or your favorite tortilla chips!
