So, as we have more time to spend at home...I've adopted a new hobby: stress baking. I call it that because to me, kitchen time is mind numbing. I don't have to think too much about and and the rewards are amazing! So here is my list of what I've been stress baking.
Trays of cookies, full muffin tins, freezer full of breads! The list really goes on. Alllll these sweets and no one to share them with. Dangerous.

Best Stress Baking Recipes
Krolls Cookies - Krolls Korner
Ok, these are the kind of chocolate chip cookies that you make for your kids & they grow up saying "My mom makes the BEST chocolate chip cookies." I've shared this recipe countless times and Tawnie just put it out a couple of weeks ago. She now has a snickerdoodle version and I'll be baking those too. Don't you worry. They are LARGE and IN CHARGE. These chocolate chip cookies are literally the size of your fist and perfectly cakey on the inside. She also has awesome videos on how to make these chocolate chip cookies. GO!
Banana Rum Muffins -Krolls Korner
Next up, also from Krolls Korner, these Banana Rum Muffins. I didn't know whether I should even eat these in the morning haha! However that surely didn't stop me from doing so. These boozy muffins are the perfect combo of browned butter and warm banana. My house smelled heavenly and the rum was the perfect added flavor to this deeply satisfying muffin! Like I mentioned before, she has awesome videos on how to make muffins and cookies!
Flourless Chocolate Cake - Frosting and Fettucinni
Next up a decadent, yet light, chocolate cake. How is this possible?! It's flourless, yet super rich and chocolatey. This flourless chocolate cake was a huge hit at my family's Easter lunch. My husband loves good chocolate cake and he couldn't stop eating this one! I loved the sprinkle of sugar and the crackly top of the cake. Although I should have used the right size pan because it totally blew over the sides of my dish. I didn't care, because CHOCOLATE CAKE.
No-Knead Bread - Cosette's Kitchen
This has been my go-to crusty bread recipe for weeks now! What could be a better stress bake than bread? Sourdough is so popular right now! My mom even has me making her a loaf every time I bake it! You mix everything in a large bowl and let it sit overnight, bake in the morning. Perfect crust and great flavor! Our favorite way to eat it is grilled with my Spicy Goat Cheese Spread. I had a brief stint with sourdough last year, it is fun to try and figure it out but, its high maintenance. This is NOT! You set it and forget it overnight and then your house smells like a bakery all day. You're welcome.
Brownie Crinkle Cookies - Gimme Some Oven
Made at least 2 batches of these cookies in one week. ONE WEEK. St Patricks Day we spent with my family. I make a full dinner and brought a huge basket of these warm cookies over. And I came back with NONE. Think if a brownie had a baby with a soft crinkle cookie. That's what these are. Its perfectly crispy on the outside but still soft and chewy on the inside. The cracked tops are so satisfying to watch unfold in the oven and these are way to easy to eat many of since they are so thin.
Cinnamon Rolls - Ambitious Kitchen
Lastly, I'm wrapping up this stress baking with some BOMB cinnamon rolls. These are from Ambitious Kitchen and it may be the most famous cinnamon roll recipe ever. Mixed by wooden spoon with love. These warm yummy cinnamon rolls are NOT over the top sweet which I love. I served these for Mother's Day and I didn't leave with any extras. It's not a quick fix recipe which is what I was looking for. Who cares, I've got all the time in the world now that I'm spending more at home! These will now be served at Christmas morning. Legendary!
