Easy lunches are hard to come by, but this easy, 10-minute Smoked Salmon Sandwich is crusty bread topped with avocado, feta, and tomato is PERFECT. It's the perfect sandwich for lunch or brunch!

Slice them into pieces to create perfect appetizer-sized bites or even leave it open-faced and top it with a poached egg for a cafe-style brunch at home.

Salmon Sandwich

Salmon is a great lunch meat option instead of the traditntal turkey or ham. It's a lean protein with tons of flavor, especially when it's smoked! You'll need these ingredients for our easy lunch...

  • 6 oz smoked salmon
  • 8 slices of crusty bread (or 4 slices for an open faced sandwich!)
  • 1 roma tomato
  • 2 avocados, mashed
  • arugula
  • 2 oz feta cheese
  • olive oil
  • salt
  • pepper
  • pinch of red pepper flakes

Panini Press Smoked Salmon Sandwiches with Feta and Arugula

Need an easy way to toast that toast? We bailed on our toaster oven when we moved into the new house and I needed a creative way to prep a piece of toast.

Enter: panini maker. I love making paninis and it's the perfect, quick way to "grill" or toast something. Other recipes I love using my panini press for including my Frontega Chicken Panini or Grilled Halloumi Salad.

But for this sandwich, this is how it's done...

  1. Drizzle olive oil on the slices of bread and place on the panini maker.
  2. Press for 2-3 minutes until toasty.
  3. Mix the mashed avocado with salt, pepper, and crushed red pepper.
  4. Spread the avocado on the toast and add tomato, arugula, salmon, and feta.
  5. Enjoy!

Is Smoked Salmon Cooked?

Have you had smoked salmon? It's very easy to find at the local grocery store and comes in many flavors!

Smoked salmon IS cooked. It's smoked! It's fully cooked and ready to eat right out of the package.

I love smoked salmon that has dill or other seasonings on it. It adds to the depth of flavor and is so good on a smoked salmon sandwich or salmon bagel!

Like I mentioned above, it is fairly easy to buy salmon that has been smoked.

Costco smoked salmon is wildly popular but I also really enjoy it from Trader Joe's, Kroger, and even Aldi!

What Toppings Go Well With It?

Smoked salmon is a delicacy that is so rich and savory. It goes extremely well with creamy elements like cream cheese or feta cheese.

Also adding in a few bright and fresh elements add perfectly to the mix. Arugula or micro greens, or even tomato!

Put all of those elements on a slice of crusty bread and it's a match made in heaven.

You do not! Smoked salmon is smoked and fully cooked. You can definitely heat it up but is fine to eat cold as well.

I would eat these immediately after making them. If you plan to store them, store all ingredients separately and then assemble and eat right away.
