Soft, chewy, spiced — and everything nice! That’s what these decadent oatmeal cream pies are with their to-die-for salted cinnamon buttercream sandwiched between fresh oatmeal cookies.

What Makes These Oatmeal Creme Pies Different Better

Homemade oatmeal cream pies from scratch are arguably much better than the flat, almost always squished in the package store-bought ones! These are super packed with holiday spices and layered with homemade buttercream.

Oatmeal cookies are one of my vices. I can usually walk away from most sweets, but oatmeal cookies are just so perfect!

It's only natural that I would take my favorite cookie recipe and turn it into a decadent holiday treat by stuffing it with Salted Cinnamon Buttercream!

Homemade oatmeal creme pies just take a few ingredients and are basically qualify as breakfast if you ask me...

For the Spiced Oatmeal Cookies

Oatmeal pie cookies need the following ingredients for our base cookie...

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla
  • 1 teaspoon cinnamon 
  • ½ teaspoon nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 ¾ cup old-fashioned oats
  • ⅓ cup oat flour
  • ⅓ cup flour

For the Buttercream Filling

Oatmeal cream cookies need a delicious filling! You'll need...

  • Butter 
  • Powdered sugar
  • Cinnamon
  • Sea salt 
  • Milk

How to Make These Oatmeal Cookie Sandwiches

This Little Debbie upgrade couldn't be easier to make at home! It's a one-bowl cookie recipe and how can it get any better than that?

Step 1: Make the Oatmeal Cookies

  1. Preheat the oven to 325°F. Line two cookie sheets with parchment paper, or lightly grease them.
  2. In a medium mixing bowl, combine the butter and sugar With a hand mixer and mix well.
  3. Add the egg and vanilla
  4. Whisk in the cinnamon, nutmeg, baking soda, baking powder and salt.
  5. Next, add the oats, oat flour and flour. Blend well.
  6. Using a 2 tablespoon cookie scoop. Space evenly, at least 2 inches apart.
  7. Bake for 12 minutes, until they’re a light golden brown.
  8. Remove the cookies from the oven and let cool.

Step 2: Prepare the Creme Pie Filling 

  1. While those are cooling, in a separate mixing bowl add softened butter and whip until light and fluffy. About 1 minute.
  2. Add in a pinch of sea salt, cinnamon, and ½ cup of powdered sugar. Mix well.
  3. Continue adding the powdered sugar in batches until it’s all mixed in.

Step 3: Assemble the Little Pies

  1. Fill a piping bag or ziplock bag with the buttercream and pipe onto half of the cookies.
  2. Top them with the other halves of cookies and enjoy!

Can I Use Cream Cheese Instead of Buttercream?

Swapping in cream cheese for the sweet buttercream would be a delicious alternative!

Simply whip the cream cheese with cinnamon, salt, and powdered sugar to create a cream cheese-filled Oatmeal Creme Pie!

Are These Oatmeal Creme Pies Good for You?

Everything is healthy in moderation, right? While these Oatmeal Whoopie Pies might be a little bit of an indulgence, oats are actually a great way to incorporate fiber and carbs into your holiday treats!

Best Way to Store Oatmeal Cream Pie Cookies So They Stay Fresh

Storing these cookies is very simple, however, you'll want to keep the cookies and the buttercream separate while storing so the cookies don't get soggy!

I like to keep the buttercream in the fridge and give it a stir right before piping it onto the pies.

Keep the spiced oatmeal cookies in an airtight container for up to 7 days!

Can Oatmeal Pies Be Frozen?

Oatmeal pie cookies should be frozen separately from the icing, but can definitely be frozen and stored for later!

Either prepare the icing right before assembling them or store the icing separately in the refrigerator.

Ingredients
