Blistered Tomatoes With Basil and Burrata

Tomatoes bursting with flavor paired with sweet basil and creamy burrata. Blistered tomatoes are an amazing side dish or salad to serve up this season. Use up those garden tomatoes with this recipe.

Ingredients

  • 1 pint cherry tomatoes
  • 2 tablespoons vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 5 basil leaves, thinly sliced
  • buratta cheese
  • 2 tablespoons balsamic vinegar

Cast Iron Skillet Tomatoes

This simple 5 ingredient recipe for blistered tomatoes is best prepped in a heavy bottomed pan like a cast iron skillet.

I love my cast iron. Caring for it isn't too difficult once you know the ground rules and it's one of my go-to's for any weeknight dinner.

The cast iron pan distributes heat evenly and makes these blistered tomatoes a really quick treat! So here's how to blister tomatoes....

  1. First you will want to heat the skillet over high heat with a little bit of oil.
  2. Add the tomatoes to the skillet and leave them! We want the skin to get charred and blistered.
  3. Leave them in the pan without stirring for 1-2 minutes then give them a stir.
  4. Sprinkle with salt and pepper.
  5. Add slices of fresh basil.
  6. Serve in the skillet or spoon on a plate and top with a few dashes of balsamic vinegar and the ball of burrata in the center.

Other Herbs To Use

If you don't want to use basil you could definitely take a different direction and use herbs like oregano, marjoram, or even fresh thyme!

Any Italian blend of spices would be delicious with the feta and balsamic. Fresh or dried herbs work well for this recipe. So whichever you have on hand would work just fine.

Blistered tomatoes are a bit charred with a delightful sweetness and can be used in so many ways!

The best tomatoes to use for this recipe are cherry tomatoes. These tomatoes are perfectly bite sized and char in no time at all.

I love to use cherry tomatoes that come in many different colors! It makes for a really beautiful presentation and they can be found in most grocery stores.

Ingredients

  • 1 pint cherry tomatoes

  • 8 oz burrata cheese
  • 2 tablespoons balsamic vinegar

Instructions

  • In a cast iron skillet over high heat, heat the olive oil.
  • Add the cherry tomatoes and just let them sit.
  • Let sit for 4-5 minutes then give them a stir for an additional 1 minute.
  • Sprinkle with salt and pepper.
  • Add the burrata to the center of a serving dish and pour the tomatoes around it.
  • Top with sliced basil and an additional pinch of salt and pepper.
  • Drizzle with balsamic vinegar if desired.
