I love my cast iron. Caring for it isn't too difficult once you know the ground rules and it's one of my go-to's for any weeknight dinner.
The cast iron pan distributes heat evenly and makes these blistered tomatoes a really quick treat! So here's how to blister tomatoes....
- First you will want to heat the skillet over high heat with a little bit of oil.
- Add the tomatoes to the skillet and leave them! We want the skin to get charred and blistered.
- Leave them in the pan without stirring for 1-2 minutes then give them a stir.
- Sprinkle with salt and pepper.
- Add slices of fresh basil.
