How To Use Fruit In Salad
Using fruit in a salad can be polarizing. Some people hate it and some love it. I think it is for everyone if you balance it well!
Apples and pears make an appearance in this fall salad and they go really well with the funky gorgonzola cheese as well the crunchy walnuts.
They are sweet and so by pairing them with something savory and "funky" like the cheese it really tames down both items!
Use A Pre Packaged Salad
Let's be real, we want to make our lives easier. Use a kale crunch salad mix from your local grocery store for the greens of this salad. It's going to be a mix that has shredded kale, cabbage, maybe some Brussel sprouts and it's perfect for this salad!
What is Gorgonzola Cheese?
It's one of those stinky cheeses like blue cheese! If you hate it, leave it off or swap it for something less "funky" like a white cheddar.
It is rich, pungent, and has blueish veining throughout it. You can usually find it in crumbles or in wheels like brie.
I like the crumbles for easy eating, but the wedges look pretty on your salad plate!
What Dressing To use for Crunchy Apple Salad
I actually found a Pear and Gorgonzola Vinaigrette at Trader Joes that was PERFECT for this dish! It had a little sweetness and the funk of the cheese in it.
If you don't have that option a Balsamic dressing (I use this dressing in my Fall Harvest salad and Easy Prep Fruit Salad) would be great as well as a simple vinaigrette like this Cranberry Vinaigrette!
Fall Apple Crunch Salad
- 2 bags kale crunch salad this should be a mix of shredded kale cabbage, brussel sprouts! Regular kale will be fine as a substitute)
- 2 apples sliced
- 2 pears sliced
- 1/2 cup walnuts
- 1/4 cup golden raisins
- 4 oz gorgonzola cheese
- 1/4 cup salad dressing Pear Gorgonzola, Balsamic, or Cranberry Vinaigrette
- In a large bowl combine the 2 bags of kale crunch salad, walnuts, golden raisins, and gorgonzola cheese. Toss to combine.
- Top with the dressing and toss again.
- Finish the salad with sliced pears and apples.
