Fruit Salad with Burrata and Pistachios

A classic fruit salad is getting a salty and creamy makeover! My Strawberry Peach Burrata Salad with Honey and Pistachio dressing is sweet, salty, creamy, and PERFECT for summer.

Fresh burrata is one of my favorite delicacies. Burrata is an Italian cheese of solid mozzarella on the outside and shreds of mozzarella soaked in cream on the inside.

It has a soft and creamy texture that is truly unique and pairs well with savory and sweet. I even love topping lasagna with it!

Ingredients For This Burrata Salad

Burrata - I loved using BelGioso Burrata and it's sold in local grocery stores like Kroger, Trader Joes, and Walmart.

Strawberries and Peaches - fresh sliced fruit is the star of this fruit salad with burrata!

Pistachios - I used lightly salted pistachios and it is a great balance with the fruit and creamy burrata cheese.

Honey - Adding a touch of honey makes the crushed pistachios easy to drizzle and drip all over the fruit.

Lemon - Acidity of lemon is the finishing bright touch this burrata fruit salad needs!

How To Make Burrata

Burrata always amazes me! Its a shell of mozzarella cheese stuffed with stretched curds of mozzarella soaked in cream.

The mozzarella is stretched and stuffed with the curds and wrapped up like a cute little dumpling!

Like mozzarella, burrata is stored in water to keep its moisture. It's a decadent cheese that pairs beautifully with fruit or herbs!

How To Serve Burrata

I think burrata cheese can be served in SO many ways. It's great for drizzling with olive oil, over a salad, or with fruit.

Drizzle a little olive oil over the top and season with salt and pepper. Garnish with fresh basil and enjoy with tomatoes!

Set on top of a fresh arugula salad and cut open to enjoy the creamy inside.

Place it on a tray with fruit, cheese, and crackers. Enjoy an amazing spread!

Ingredients

  • 1 large ball of burrata cheese
  • 1 pint strawberries sliced
  • 3 peaches sliced
  • 1/2 cup pistachios finely chopped
  • 1/4 cup tablespoons of honey
  • juice of 1 lemon

Instructions

  • On a large plate, place the burrata ball in the center and surround with the sliced strawberries and peaches.
  • In a small bowl combine the pistachios, honey, and lemon juice. Stir.
  • Pour the pistachio mix over the burrata and slice the burrata open.
  • Serve!
