Tomato Season Appetizer

Looking for a fresh, inviting, YUMMY, rich appetizer for your next dinner party? Look no further! These caramelized tomato and onion bruschetta with burrata is the best part of tomato season right in one bite!

Italian Starter

These warm toasts topped with decadent, yet still healthy, tomato onion jam all perched perfectly on some burrata. Just wow.

It would make a great starter for your Italian dinner!

The sweetness of the tomato and onion marries well with the creamy burrata and I've got a secret ingredient in there that adds to the richness: Pomegranate Date Syrup.

Think of it as Balsamic vinegar's sweeter yet still tangy cousin. Its so yummy and adds the right amount of zing to the warm tomato onion jam.

Making the Most of Tomato Season

Tomato season is arguably one of the best produce seasons EVER! They are overflowing my garden right now, how about you!? Put them to good use. This is a great recipe for tomatoes that are slightly on the "should have used them 2 days ago" side of the spectrum.

How to Make The Perfect Crostini

So half of the beauty of this recipe is the DELISH toast everything sits upon. I used French bread and smeared it with a heaping teaspoon of Toum.

Toum is actually a Lebanese garlic sauce that is so potent yet absolutely perfectly balanced. It packs huge garlic flavor.

How to make toum.

It is oil, garlic, and lemon all whipped together slowly in a food processor to create this incredible consistency. It so yummy and it's the perfect base to this bruschetta!

Next pop those tiny toasts in to the oven and broil for 2 minutes. Perfect crostini!

Making Tomato Onion Jam

So the real star of this show is the warm tomato onion jam. To create the Tomato and Onion Bruschetta you start with

  • ½ an onion, thinly sliced
  • 3 roma tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon Pomegranate Date Syrup. If you don't have this you can definitely sub in balsamic vinegar.

Start by caramelizing the onions in a skillet with the olive oil. Prep the tomatoes by dicing them up and then add to the skillet. Cook over medium high heat until everything becomes nice and soft! About 7 to 9 minutes.

This is when you'll add in the salt and date syrup. Give it another stir and continue cooking for another 5 minutes.

Assembling The Bruschetta

So now that we have our perfect crostini, grab your burrata cheese and tomato onion jam.

Place a large torn piece of burrata (or mozzarella) on the toast followed by a large spoonful of the tomato and onion bruschetta. I topped with a little bit of micro greens but you could use basil!

Drizzle with a little extra date syrup if you like and enjoy!

Tomato Onion and Burrata Bruschetta

Delicoius way to use up tomatoes that may be close to going bad! This warm tomato onion jam is sweetened slightly with pomegranate date syrup and is so rich on top of the burrata and toast.

Equipment

  • Baking Sheet

Ingredients

  • ½ an onion thinly sliced

  • 1 french baguette
  • 8 oz burrata or mozzarella
  • 2 tablespoon toum spread or minced garlic

Instructions

  • Start by caramelizing the onions in a skillet with the olive oil.
  • Prep the tomatoes by dicing them up and then add to the skillet.
  • Cook over medium high heat until everything becomes nice and soft! About 7 to 9 minutes.
  • This is when you'll add in the salt and date syrup.
  • Give it another stir and continue cooking for another 5 minutes.
  • While that cools off, prep your toast by putting a small amount of garlic or toum on each slice of baguette.
  • Pop them under the broiler for 2 minutes
  • Remove and top with torn pieces of burrata.
  • Top the burrata with the tomato onion jam and some basil or micro greens!

Notes

If you do not have pomegranate date syrup, just use balsamic vinegar or balsamic glaze
