Easy, healthy, delicious Stuffed Courgettes should be on your dinner line up this week! 25 minutes of cook time, tender zucchini and rich ground beef really do make the perfect dinner.

What is a Courgette

A courgette is simply a green summer squash! Smooth, edible skin and a tender inside. I love this vegetable!

It is abundant in the Summer months and this is a perfect meal to make with green courgettes. It's filling however still light.

You will find them called zucchini here in the United States but courgettes in France or Britain.

Middle Eastern Stuffed Courgettes

Zucchini is a common vegetable used in Middle Eastern cooking. I love using it because it's easy to find and delicious!

Dishes like Kousa Mahshi are one that comes to mind that has a lot of the same ingredients as these stuffed courgettes. Beef, spices, and zucchini! It makes a delicious and healthy dinner done in a pinch.

This is what you'll need...

  • 1 lb ground beef
  • 3 courgettes (or green zucchini)
  • salt, pepper, cinnamon
  • 1 yellow onion

So simple!

How To Bake Courgettes

To make this stuffed zucchini squash recipe you will need one tool to make the job easier! A zucchini corer! You can find these on Amazon and you will use it more often than you think.

  • Cut the zucchini in half and core them
  • Bake the zucchini at 350 degrees for 10 minutes or so while you prep the filling.
  • Chop the onion
  • Sauté the onion with a little olive oil in a large pan.
  • Add the ground beef and spices. Cook until meat is fully cooked through.
  • Remove the courgettes from the oven and evenly stuff with the filling. You will likely have extra filling.
  • Return to the oven for another 5 minutes.

Do you peel the squash before eating?

That is one of the beautiful things about this squash! Its skin is completely edible which makes for very easy prep. So no, you do not have to peel courgettes before cooking or eating.

Like in this Italian Zucchini Noodle salad, I prepare it with the skin on and it's delicious.

Ingredients

  • 1 lb ground beef
  • 3 courgettes or green zucchini
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 tablespoon cinnamon
  • 1 yellow onion
  • 1 tablespoon olive oil
  • 1/4 cup greek yogurt

Instructions

  • Preheat the oven to 375.
  • Cut the ends off of the zucchini and cut them in half.
  • Scoop out the inside of the zucchini and discard.
  • Place the zucchini in a baking dish and sprinkle it with a pinch of salt.
  • Bake for 15 minutes and prepare the beef.
  • In a skillet, saute the onion with olive oil for 5-7 minutes.
  • Add in the beef, salt, pepper, and cinnamon.
  • Cook until the beef is fully done.
  • Remove the zucchini from the oven and stuff them with the beef mixture.
  • Place back into the oven for another 5 minutes.
  • Drizzle with greek yogurt and another pinch of salt. Enjoy!
