This is one of those recipes for me! This month on 30 Minute Monday we are doing grilling recipes which already remind me of my Dad! But, he makes these Grilled Chicken Sliders and they bring back great Summer memories of that grill all fired up and enjoying them on the back porch with my siblings.
These are actually incredibly simple! An easy marinade of garlic powder, lemon pepper, and Italian dressing mixed with chicken thighs. Throw them on the grill and stack em up with cucumber slices, and avocado ranch dressing!
Easy, right? These sliders are the perfect appetizer or meal and the little Hawaiian Buns are so fun for kids because they are just the right size.
How To Grill Chicken Thighs
- To grill chicken thighs you want to preheat the grill to medium high heat, up to 400 degrees.
- Lightly oil your grill and cook your boneless chicken thighs for a few minutes on each side. 6 or 7 minutes usually works for me.
- You are looking for an internal temperature of 165. This is easy to tell if you got there if you have a simple meat thermometer! Trust me you want one!
My Dad makes these for us every Summer and it reminds me of days by the lake and endless laughs!
Chicken thighs are tender and juicy, in my opinion much easier to grill than chicken breasts because they really hold on to that moisture a lot better! Also, after marinating in the Italian dressing they will be SO JUICY!
How Long Should I Marinate Chicken Thighs?
For this specific grilled chicken slider recipe, mix all of your spices and Italian dressing in a ziplock and mix the chicken in there until it is fully coated. You could actually immediately grill these, however for the BEST flavor I like to marinate for at least 30 minutes up to 4 hours. It's easy to prep in the morning or during a nap time and forget it in the fridge until dinner!
The Best Grilled Chicken Sliders
Ingredients
- 4 boneless skinless chicken thighs
- 4 tablespoons garlic powder
- 3 tablespoons lemon pepper
- ½ -1 cup Lite Italian Dressing
- 1 avocado
- ¼ cup ranch dressing
- 4 Hawaiian buns
- 1 small cucumber sliced thinly
Instructions
- Start by combining the spices and Italian dressing in a ziplock bag or baking dish, put chicken thighs in and marinate for 30 minutes to an hour.
- When you are ready to cook, preheat your grill to 400 degrees.
- Lightly oil your grates and place chicken thighs on the grill.
- Cook for 6-7 minutes on each side, internal temperature you are looking for is 165.
- Remove the chicken and let rest. Put your hawaiin buns on the grill for a few seconds to get them toasty!
- In a small bowl mash the avocado and combine with ranch dressing. Spread thinly on your bun, top with sliced cucumber and the chicken thigh. Enjoy your grilled chicken sliders!
