Ingredients

Baked Brioche Casserole

  • 1 loaf brioche bread diced (about 4-6 cups)
  • 6 eggs
  • 2 ½ cups whole milk
  • ¼ cup maple syrup or agave syrup
  • 2 teaspoon vanilla
  • teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Blueberry Sauce

  • 3 cups fresh blueberries divided
  • 1 tablespoon agave
  • 1 cup water

Toppings

  • powdered sugar optional for serving

Instructions

  • First make the blueberry sauce by combining 2 cups of the fresh blueberries, 1 teaspoon agave, and water in a sauce pan over medium high heat.
  • Cook for 5-6 minutes until bubbly then use the back of a wooden spoon to begin breaking up the blueberries.
  • Reduce the heat and continute cooking another 5-7 minutes until thick and reduced. Set aside.
  • Prep the casserole by whisking together the eggs, milk, maple syrup, vanilla, salt, cinnamon in a large mixing bowl.
  • Fill a 9x13 casserole dish with the diced bread and pour the egg mixture over the top of the bread. Gently press the bread into the mixture so it is saturated and top with the remaining blueberries.
  • Bake at 350 degrees for 35-40 minutes until the center is set and no longer jiggly.
  • When ready to serve, pour the blueberry sauce over the top and add powdered sugar. Enjoy!

Notes

  • Use slightly stale bread for this recipe. Fresh bread will soak all the egg custard, and you won't get the same texture. You can dry bread in the oven for 22-25 minutes at 225°F.
  • Don't be shy with the cinnamon and nutmeg! These spices are what make this dish extra flavorful.
  • Get creative with toppings! Serve it with your favorite fruits, nuts, or even a drizzle of chocolate sauce for a decadent breakfast experience.
