Apple Cheddar Pie Recipe

A delicious apple and cheddar pie filling inside the flakiest cheddar pie crust! It's a slightly savory, sweet, and spiced variation of a classic apple pie.

Ingredients

Pie Crust Ingredients

  • 2.5 cups all purpose flour
  • 2 tablespoon sugar
  • 1 cup sharp white cheddar freshly grated
  • 1 cup butter chilled and cubed
  • ½ cup ice water

Pie Filling

  • 7-8 large granny smith apples peeled and sliced
  • 1 cup dark brown sugar
  • 2 teaspoon lemon juice
  • 1 tablespoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground clove
  • ½ teaspoon salt
  • 2 tablespoon melted butter
  • 1 tablespoon cornstarch + 1 tablespoon water mixed
  • ½ cup sharp white cheddar cheese freshly grated

Instructions

  • To prepare the dough add the flour, sugar, cheese, and butter to a food processor and pulse 8-10 times to combine.
  • A few tablespoon at a time, add the iced water and pulse 2-3 times in between each addition. Repeat this until a dough forms.
  • Place the dough on a floured surface and form the dough into a ball. Divide into 2 balls and slightly flatten them out.
  • Cover each in saran wrap and refrigerate for at least 2 hours. You can make this up to 5 days ahead of time!
  • To prepare the pies make the filling by combining the apples, brown sugar, salt, and spices in a large mixing bowl. Toss gently to combine.
  • Pour in the melted butter, cornstarch mixture, and remaining cheddar cheese. Stir gently. Place this in the fridge while you roll out the pie crust.
  • Roll out the chilled pie crust on a floured surface until it has reached about 12 inches in diameter.
  • Carefully place the pie dough in a 9inch pie dish. Gently tuck the crust into the pie dish and crimp the edges or trim excess if using a top crust.
  • Spoon the filling into the pie dish and place in the fridge while the oven preheats.
  • Preheat the oven to 400 degrees and bake the pie for 25 minutes
  • Then turn the heat to 350 degrees and continue baking for an additional 25-30 minutes.
  • Remove the pie and allow to cool, serve with fresh whipped cream or ice cream!

Notes

Pro Tips For a Great Apple Cheddar Pie:
  • Always go for good quality cheddar cheese. It's the star of this recipe!
  • Make sure your butter is cold. If it melts too quickly, you won't get that flaky crust.
  • Don't overwork the dough, or it'll end up being tough.
  • The cheese might brown before the apples. If you suspect it, place an aluminum foil on top of the pie. Also, watch the oven temperature.
  • Let your pie cool down completely before slicing it. This will prevent the filling from being runny.
