To prepare the dough add the flour, sugar, cheese, and butter to a food processor and pulse 8-10 times to combine.
A few tablespoon at a time, add the iced water and pulse 2-3 times in between each addition. Repeat this until a dough forms.
Place the dough on a floured surface and form the dough into a ball. Divide into 2 balls and slightly flatten them out.
Cover each in saran wrap and refrigerate for at least 2 hours. You can make this up to 5 days ahead of time!
To prepare the pies make the filling by combining the apples, brown sugar, salt, and spices in a large mixing bowl. Toss gently to combine.
Pour in the melted butter, cornstarch mixture, and remaining cheddar cheese. Stir gently. Place this in the fridge while you roll out the pie crust.
Roll out the chilled pie crust on a floured surface until it has reached about 12 inches in diameter.
Carefully place the pie dough in a 9inch pie dish. Gently tuck the crust into the pie dish and crimp the edges or trim excess if using a top crust.
Spoon the filling into the pie dish and place in the fridge while the oven preheats.
Preheat the oven to 400 degrees and bake the pie for 25 minutes
Then turn the heat to 350 degrees and continue baking for an additional 25-30 minutes.
Remove the pie and allow to cool, serve with fresh whipped cream or ice cream!
