20 Minute Chicken Taquitos in an Air Fryer

A cheesy chicken taquito made right at home in the air fryer! A cheesy, salsa and chicken mixture rolled up tightly and air fried to perfection!

Equipment

  • 1 air fryer

Ingredients

  • 2 cups of shredded rotisserie chicken or 2-3 chicken breasts
  • 8 oz cream cheese
  • ¼ cup salsa
  • ¼ cup sour cream
  • 2 tablespoon taco seasoning
  • 4 oz can diced green chiles
  • 1 cup shredded mexican cheese
  • 18-20 fajita tortillas
  • Olive oil

Instructions

  • In a mixing bowl beat the cream cheese and sour cream together with a hand mixer.
  • Add in the salsa, taco seaoning, green chiles, and shredded cheese and continue to beat with the hand mixer for 30 seconds until combined.
  • Stir in the shredded chicken and refrigerate until ready to make the taquitos.
  • When you are ready to make the taquitos, preheat the air fryer at 400 degrees for 5 minutes.
  • Take the fajita tortilla and spread 2-3 tablespoons of filling on half of the tortilla. If you are using corn tortillas you may want to microwave them on a plate and then cover with a damp paper towel to keep them soft enough to roll without tearing.
  • Tightly roll the tortilla up and repeat for each tortilla until the filing is gone.
  • In batches, place 4-6 taquitos in the air fryer basket and spray evenly with olive oil. You can also use a brush to brush on olive oil.
  • Air fry at 400 degrees for 7-8 minutes until golden brown.
  • Repeat until all taquitos are cooked. Serve with sour cream and garnished with cilantro.

Notes

  • Don't Crowd The Basket. It's important to do it in batches so you don't overcrowd the air fryer basket. This ensures an even, crispy tortilla.
  • Do I need cooking oil? If you feel strongly against it, skip it. However it does help to achieve the best crisp on the edges!
  • Sauces For Taquitos...Salsa, pico de Gallo, guacamole, and sour cream make delicious sauces! However if you have extra Green Chile Enchilada sauce from my recipe, use that as the dipping sauce. 
  • Storage Tips: Place these in an airtight container and refrigerate or freeze until ready to reheat.
  • The trick to wrapping the perfect taquito is to warm up the tortilla first.
