INGREDIENTS:

– 18-20 oz premade – 1 15 oz can of corn white or yellow – 1 jalapeno – 1/2 a large red onion finely diced – 2 tablespoons lime juice – 1/4 cup cilantro chopped – 1/2 teaspoon salt

1.  Preheat the oven to 400 degrees and cut your jalapeno in half.

2.  Place on a baking sheet and roast for 10 minutes.

4.  Place corn, red onion, cilantro, salt, and lime juice in a medium mixing bowl.

5.  When the jalapeno is done roasting, finely chop and add to the mixing bowl.
