Pesto Egg Sandwich

Easy to make breakfast sandwich with melty cheese, basil pesto, and a fried egg!

Ingredients

  • 4 eggs
  • 4 english muffins cut in half
  • 4 tablespoons of pesto
  • 4 slices of provolone cheese
  • 2 tablespoons chili onion crunch

Instructions

  • In a nonstick skillet heat up the 4 tablespoons of pesto over medium-high heat.
  • Lay out the english muffin slices and top one half of them with the provolone cheese.
  • Broil for 2-3 minutes until the cheese is melted. Set aside
  • Crack the 4 eggs into the skillet over the pesto.
  • Cook for 3 minutes then flip them over and cook to your desired doneness. I like over medium, so an additional 1 minute.
  • Top the english muffins with the egg and a ½ tablespoon of chili onion crunch. Enjoy!
