Pesto Egg Sandwich
Easy to make breakfast sandwich with melty cheese, basil pesto, and a fried egg!

Servings: 4 sandwiches
- 4 eggs
- 4 english muffins cut in half
- 4 tablespoons of pesto
- 4 slices of provolone cheese
- 2 tablespoons chili onion crunch
In a nonstick skillet heat up the 4 tablespoons of pesto over medium-high heat.
Lay out the english muffin slices and top one half of them with the provolone cheese.
Broil for 2-3 minutes until the cheese is melted. Set aside
Crack the 4 eggs into the skillet over the pesto.
Cook for 3 minutes then flip them over and cook to your desired doneness. I like over medium, so an additional 1 minute.
Top the english muffins with the egg and a ½ tablespoon of chili onion crunch. Enjoy!
