Preheat grill or grill pan to medium-high heat.
Brush peach halves with olive oil. Grill cut-side down 2–3 mins until charred. Let cool, then slice.
Shake vinaigrette ingredients in a jar. Taste and adjust with salt and pepper.
Toss greens with vinaigrette and plate
Top with grilled peaches, goat cheese, nuts, basil, prosciutto (optional), salt, and pepper
Storage Directions:
Store the salad components and dressing in separate airtight containers in the fridge to keep the leafy greens crisp, preserve the fresh flavors, and prevent the various textures from getting soggy. Keep the grilled peaches in their own container in the fridge for up to 3-4 days.
Recipe Tips
- Pick ripe AND firm peaches for grilling. A firm peach will be able to handle the heat and is less likely to overcook. Overripe peaches are too soft and will be at risk of falling apart on the grill.
- Monitor the peach grilling time. My instructions say to grill the peach slices cut-side down for 2-3 minutes, but you might need more or less time, so monitor progress closely. Keep in mind that peaches on the riper side will grill faster, requiring less cooking time.
- Keep the peaches thick. I recommend cutting the peaches in half to grill, but you can also grill smaller peach slices. The trick here is to cut them into thick enough slices or wedges to prevent them from falling apart on the grill grates as they cook.
