Equipment

Ingredients

  • 6 ripe peaches sliced
  • 2 tablespoon cornstarch
  • cup brown sugar
  • 3 tablespoon agave
  • 1 teaspoon lemon juice
  • 2 teaspoon cinnamon
  • ½ box yellow cake mix
  • ½ cup butter sliced into 9 squares
  • vanilla ice cream to serve

Instructions

  • In a mixing bowl combine the sliced peaches, lemon juice, cinnamon, agave, brown sugar, and cornstarch. Gently toss to combine.
  • Preheat the oven to 375 degrees
  • Spray cooking spray in a 9x9 baking dish and add the peaches to the baking dish.
  • Sprinkle the cake mix over the peaches and then top the cake mix evenly with the pats of butter.
  • Bake in the oven for 40-45 minutes
  • Serve with vanilla ice cream

Notes

Storage Directions
  • Refrigerating: Let the leftover peach cobbler cool completely to room temperature before covering it with aluminum foil or transferring it to an airtight container and refrigerating it for up to 5 days. 
  • Freezing: The cooled leftovers can also be frozen in a freezer-safe container for up to 3 months. Defrost it overnight in the refrigerator until thawed.
  • Reheating: Warm individual servings of peach cobbler in the microwave on gentle heat until hot.
Recipe Success Tips
  1. Slice the peaches uniformly. Though they don’t have to be perfect, having peaches of approximately the same size — I recommend about ⅛-inch thick — allows them to cook evenly, making the peaches consistently soft. 
  2. Let the sweetened peaches rest. Once sliced and mixed with the brown sugar mixture, let the fruit sit at room temperature while the oven preheats to allow the peaches to soften and create a nice fruit filling. 
  3. Space out the pats of butter. As the butter melts, it will hydrate the cake mix, allowing it to bake up to tender, moist perfection. Prevent dry spots by spreading out the slices of butter evenly. If desired, you can also use melted butter and drizzle it over the topping.
  4. Cool slightly before serving. The peach filling will set slightly during the 15-20 minutes, making it velvety and luxurious!
