Roasted Artichokes

Roasted artichokes

Artichokes are the perfect side dish or appetizer any time of year. They are delicious and deceptively easy to make at home.

Cook Time: 40 Min


artichokes potatoes parmesan chives garlic salt and pepper

olive oil greek yogurt water red onions 

begin by cutting 3/4 of the stem off the artichoke and then trimming the leaves 

carefully cut the artichoke in half

Using a spoon, scoop the interior or the "choke" of the artichoke out of the center. This is inedible. 

Dice the potatoes and arrange the artichokes and potatoes in a dish. Season with salt and pepper. 

Roast until tender. About 40-50 minutes. While that is cooking blend the chives, garlic, yogurt, parmesan, a bit more salt and pepper and a splash of water.  

Serve the artichokes garnished with sliced red onion and the parmesan sauce. Enjoy
