Vegan Broccoli "Cheddar" Soup

A broccoli "cheddar" soup that is completely dairy free, done in 30 minutes and loaded with veggies.

Cook Time: 30 min

Ingredients

 cauliflower florets  almond milk nutritional yeast (or parmesan cheese) cashews  veggie stock

 broccoli  mushrooms  salt and pepper  garlic onion ground mustard sweet potato

Steam the cauliflower and blend with almond milk, nutritional yeast,  cashews, splash of water, olive oil, garlic, salt, and pepper until smooth.

In a large soup pot saute the onion for 3-5 minutes. Add in broth, diced sweet potato, mushrooms, cauliflower mixture, salt and pepper and bring to a simmer. 

Heat the soup again and cook for another 5 minutes until broccoli is tender. Enjoy!
