Healthy Maple Pumpkin Oatmeal Bars

Delicious breakfast for on the go mornings. A pillowy soft oatmeal bar baked with pumpkin warming spices.

Ingredients

  • 1 cup pumpkin
  • 1 egg
  • ½ cup maple syrup
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla
  • ¼ cup flax seeds
  • 2 cups oats
  • 1 ⅓ cup oat flour
  • 1 tablespoon pumpkin spice
  • ½ teaspoon salt

Optional Glaze:

  • 2 tablespoons maple syrup
  • 2 tablespoons JOI Almond Base
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin spice

Instructions

  • In a large bowl combine pumpkin, maple syrup, egg, and vanilla. Whisk to combine.
  • In a medium bowl combine flour, oats, flax seeds, salt, and pumpkin spice.
  • Combine dry ingredients into the wet ingredients and mix to combine.
  • Pat the "dough" into a greased 9x9 pan and bake at 350 for 20 minutes.
  • For the glaze combine all ingredients in a bowl and whisk. Drizzle over the bars once they have cooled.
