Salmon Pesto Pasta and Veggies

A loaded pasta dish that has tons of vegetables and topped with tender salmon pieces done in 30 minutes.

Ingredients

  • 16 oz Penne or rigatoni pasta
  • 1 lb salmon
  • ¼ cup kalamata olives pitted
  • ¼ cup heavy cream
  • ¼ cup pesto
  • ¼ cup chopped walnuts
  • 2 cups shredded Brussel sprouts
  • salt pepper, garlic powder
  • slices of bacon
  • juice of 1 lemon

Instructions

  • Bake the salmon at 425 degrees for 17-19 minutes.
  • Boil pasta according to package directions, reserve 1 cup pasta water.
  • In a small bowl combine the cream, pesto, lemon juice, salt, pepper, and garlic powder. Whisk.
  • Pour the sauce over the pasta and add in the pasta water.
  • Stir in the olives, walnuts, bacon, and brussel sprouts.
  • Top with flaked, baked salmon and enjoy
