Mexican Corn Dip

Healthy version of my Mom's classic corn dip. She serves it at every party and I've eaten WAY too much of it in my life time. It was time it got a lighter makeover

  • 2 cans of Mexican corn or regular corn
  • 3 cups plain greek yogurt
  • 1 container Trader Joes Cashew Fiesta Dip
  • 2 green onions
  • 1/2 cup chopped black olives
  • 1 cup shredded cheese
  • 1 cup rotel drained


  • Combine all ingredients in a mixing bowl
  • Let it chill in the refrigerator for at least 30 minutes
  • Serve with veggies such as peppers & cucumber or your favorite tortilla chips!
