Buffalo Jackfruit Dip with Blue Cheese
Delicious buffalo dip made with shredded jackfruit

- One 14oz can of jackfruit in brine I get mine at Trader Joes
- ½ cup Franks Buffalo Sauce
- ¼ cup greek yogurt
- ¼ cup blue cheese dressing or ranch
- Cilantro and green onion for garnish
In a large pan add ¼ cup of water and the chunks of jackfruit.
Bring to a simmer over medium-high heat and place the lid on.
Let this steam for 10-15 minutes until the jackfruit is tender enough to shred with 2 forks.
Shred the jackfruit.
Pour in the buffalo sauce, greek yogurt, blue cheese and stir.
Heat completely through.
Serve with veggies, chips, or on a taco!
