Zesty Tray Bake Salmon and Asparagus

Ingredients

  • 2 lb whole salmon filet
  • 1 bunch asparagus
  • zest of 1 lemon
  • juice of 1 lemon
  • 2 garlic cloves minced
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoon fresh dill
  • 2 tablespoon capers
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 375 degrees.
  • To a sheet tray add your whole salmon filet and place the asparagus around it.
  • Spray with cooking spray or olive oil.
  • Season the salmon and the asparagus with the lemon zest, lemon juice, salt, pepper, dill, and capers.
  • Bake the salmon and asparagus for 17 minutes or until the internal temperature reaches 145 degrees.
  • Remove from the oven, allow to cool for 5 minutes then slice the salmon and serve with asparagus.
