Jalapeno Corn Casserole

Ingredients

  • 1 box cornbread mix
  • 1 jalapeno diced
  • ½ a whtie onion diced
  • 1 tablespoon olive oil
  • ½ cup greek yogurt
  • 2 eggs
  • 1 can creamed style corn
  • 1 can of corn drained
  • ¼ cup hot honey
  • 1 cup shredded white cheddar cheese

Instructions

  • Preheat the oven to 400 degrees
  • In a large bowl combine all ingredients except the honey and stir well.
  • Spray cooking spray or olive oil in a 9x9 baking dish and pour in the cornbread mixture.
  • Bake for 50 minutes or until you can stick a toothpick in the middle and it comes out clean.
  • Slice and serve then top with the hot honey. Enjoy!
