Jalapeno Corn Casserole

- 1 box cornbread mix
- 1 jalapeno diced
- ½ a whtie onion diced
- 1 tablespoon olive oil
- ½ cup greek yogurt
- 2 eggs
- 1 can creamed style corn
- 1 can of corn drained
- ¼ cup hot honey
- 1 cup shredded white cheddar cheese
Preheat the oven to 400 degrees
In a large bowl combine all ingredients except the honey and stir well.
Spray cooking spray or olive oil in a 9x9 baking dish and pour in the cornbread mixture.
Bake for 50 minutes or until you can stick a toothpick in the middle and it comes out clean.
Slice and serve then top with the hot honey. Enjoy!
