Corn-Chile Salsa (Chipotle Copycat Recipe)

Delicious corn-chile salsa with roasted chiles and tons of fresh lime juice, scoop it all up with some tortilla chips or even over tacos. It's a great healthy snack to keep on hand.

Equipment

  • 1 mixing bowl

Ingredients

  • 2 15 oz can of corn white or yellow
  • 1 jalapeno
  • ½ a large red onion finely diced
  • 2 tablespoons lime juice
  • ¼ cup cilantro chopped
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 400 degrees and cut your jalapeno in half.
  • Place on a baking sheet and roast for 10 minutes.
  • While that is roasting, drain the can of corn, dice the red onion, and cilantro.
  • Place corn, red onion, cilantro, salt, and lime juice in a medium mixing bowl.
  • When the jalapeno is done roasting, finely chop and add to the mixing bowl.
  • Mix the corn and chile salsa well and add more salt if desired.
  • Serve with chips!
