Corn-Chile Salsa (Chipotle Copycat Recipe)
Delicious corn-chile salsa with roasted chiles and tons of fresh lime juice, scoop it all up with some tortilla chips or even over tacos. It's a great healthy snack to keep on hand.

- 2 15 oz can of corn white or yellow
- 1 jalapeno
- ½ a large red onion finely diced
- 2 tablespoons lime juice
- ¼ cup cilantro chopped
- ½ teaspoon salt
Preheat the oven to 400 degrees and cut your jalapeno in half.
Place on a baking sheet and roast for 10 minutes.
While that is roasting, drain the can of corn, dice the red onion, and cilantro.
Place corn, red onion, cilantro, salt, and lime juice in a medium mixing bowl.
When the jalapeno is done roasting, finely chop and add to the mixing bowl.
Mix the corn and chile salsa well and add more salt if desired.
Serve with chips!
