BBQ Smashed Potatoes

Easy to make summer side dish, perfect for any cookout! Smashed baby red potatoes topped with cheese, bacon, and bbq sauce.

Equipment

  • 1 sheet tray

Ingredients

  • 12-14 baby red potatoes
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • ½ cup shredded cheddar cheese
  • 3 slices bacon cooked and diced
  • 2 green onions chopped
  • ¼ cup cilantro chopped
  • ½ cup your favorite barbecue sauce I used KC Masterpiece!

Instructions

  • Preheat your oven to 400 degrees.
  • On a baking sheet, drizzle olive oil all over the baby potatoes.
  • Season them with salt and pepper.
  • Roast in the oven for 20 minutes until tender.
  • Smash them with a potato masher or the back of a spoon until they are flat.
  • Top with cheese, bacon, green onion, cilantro, and barbeque sauce!
