Smoked Salmon Sandwich

Ingredients

  • 6 oz smoked salmon
  • 8 slices of crusty bread or 4 slices for an open-faced sandwich!
  • 1 Roma tomato sliced
  • 2 avocados mashed
  • 1 cup of arugula
  • 2 oz feta cheese
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • pinch of red pepper flake

Instructions

  • Drizzle olive oil on the slices of bread and place on the panini maker.
  • Press for 2-3 minutes until toasty.
  • Mix the mashed avocado with salt, pepper, and crushed red pepper.
  • Spread the avocado on the toast and add tomato, arugula, salmon, and feta.
  • Enjoy!
