Smoked Salmon Sandwich

- 6 oz smoked salmon
- 8 slices of crusty bread or 4 slices for an open-faced sandwich!
- 1 Roma tomato sliced
- 2 avocados mashed
- 1 cup of arugula
- 2 oz feta cheese
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- pinch of red pepper flake
Drizzle olive oil on the slices of bread and place on the panini maker.
Press for 2-3 minutes until toasty.
Mix the mashed avocado with salt, pepper, and crushed red pepper.
Spread the avocado on the toast and add tomato, arugula, salmon, and feta.
