BLT Chicken Salad

Light and healthy BLT Salad made with chopped chicken and your favorite BLT toppings. Tossed together in a creamy yogurt dressing.

Equipment

Ingredients

  • 2 cups rotisserie chicken shredded or chopped You could definitely use any leftover chicken breast you have as well!
  • 5 cups iceberg or romaine lettuce
  • 1 pint cherry tomatoes
  • 5-6 slices turkey bacon
  • 3 green onions
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup greek yogurt or mayo to make whole 30 compliant!
  • ½ cup white cheddar cheese omit for whole 30

Instructions

  • Cook 5-6 slices of turkey bacon according to package directions.
  • Shred or chop your rotisserie chicken.
  • Chop lettuce, tomato, onion, turkey bacon, and toss together in a bowl with the chicken.
  • In a small mixing bowl combine Greek yogurt, cheddar cheese, garlic powder, salt, and pepper.
  • Toss the salad with the dressing and enjoy.
