Easy Butternut Squash Soup

Roasted Squash SOup

When the air starts to get crisp and the nights a little chilly, you better believe I am busting out this Butternut Squash Soup! Ok maybe even before it gets chilly...what can I say? I love to make soups!

Cook Time: 50 Min

Ingredients

butternut squash avocado oil apple onion sage leaves veggie broth garlic

cream or coconut milk salt and pepper red pepper flakes goat cheese (optional)

Peel and dice the squash, then roast until tender. Meanwhile, sauté apples and onions in oil 

Add sage, garlic, and spices to the apples/onions. Pour in the broth and water. Stir to combine then add roasted squash pieces.

Simmer for 15 minutes then remove and carefully add to high speed blender. Blend until smooth. Return the soup to the pot and add cream. 

Dish the soup up and top with goat cheese and pumpkin seeds!
