10 Thirty minute meals
Maybe it's because we have less and less time to devote to being in the kitchen, or we want instant gratification, or you are just plain starving! There are many reasons people gravitate towards my 30 Minute Monday Meals! So I decided to do a round up of ten 30 Minute Meals for you guys! Let's go through them!
I used ground turkey instead of beef & it gives this burger bowl its healthy twist. Iif you load it with veggie toppings it’s basically a salad…
Next, adding the flavors of a Caprese salad to tomato soup just seemed natural to me. Something about tomato soup just calls for melty cheese and the zing of balsamic cuts the richness of the cheese and tomato soup.
The meatballs quickly come together in one mixing bowl and scooped into a hot skillet to brown on each side, then popped in the oven to finish off. Trader Joes bruschetta spread comes in clutch here. I used a whole jar just poured over the meatballs before going into the oven and it came out truly amazing.
Fourth is my Kafta Burgers. Kafta is essentially a mediterranean hamburger loaded with herbs and onion, grilled up, and served with pita bread. It is one of my absolute favorite dishes mostly because it is the easiest thing ever and the mint mixed with parsley make it feel light and when enjoyed with labneh (thick, strained yogurt) it’s just divine!
I’ve got a couple of “fancy” back pocket meals for when I really want to impress guests. This one just happens to be FULL of protein and atop a tangy veggie salad. Seared Ahi Tuna is one of my husband’s favorite meals that I make. So when I want to have a fun date night in, I’ll whip this up.
Next, this is an easy dinner option that has ALL the taste and texture of rich Chinese food without the guilt! I love Chinese food but all the added salt and tempting fried crab rangoons (damn you, delicious cream cheese!)
It’s one of those recipes where you want to grab a bowl and cozy up and slowly enjoy. Savory and spicy and HEALTHY! Low sodium chicken broth as the base and just loaded with fajita veggies. I top mine with toasted corn tortilla and sliced avocado. YUM!
If you have ever been over for dinner at my house, I have probably made this white chicken chili for you! It is absolutely one of my go-to recipes and is usually loaded with heavy cream, butter, and cream cheese (this is what makes it “white”). It’s indulgent and rich but I knew I needed to create a lighter version because I enjoy this soup SO much!
Moving on...Let me take something off your plate, here is an easy weeknight meal that has 7 ingredients. Most of which I guarantee you have in your pantry! Salmon is one of our favorite types of fish to cook in my house. My kiddo even loves it! Sam’s sells precut filets that are frozen and that is what we mostly use so I can always have it on hand.
Lastly, soup, soup, and more soup! That’s what is on my menu at least once or twice each week. Soup is one of those comfort dishes that doesn’t necessarily have to be filled with things that are bad for you. In fact, the opposite! Like this loaded veggie soup, much like the Roasted Squash Soup, this one is chock full of veggie goodness.
