Roasted Chili and Corn Salsa
A simple salsa recipe that tastes JUST like Chipolte's Roasted Chili Corn Salsa? Yes please! This easy roasted veggie salsa is full of flavor and a great healthy snack.
The sweet corn mixed with the smokey roasted peppers make it a great combination and I love dipping it with some corn chips!
What's In Chipolte's Chili Corn Salsa?
So it wasn't too hard to track down ingredients for this Chipolte copycat salsa, they list their ingredients in their nutrition information and they also posted it on their TikTok account!
So here is what you need for it!
- corn (white or yellow is fine!)
- red onion
- lime juice
Seems too easy, right? Well, we are going to elevate it just a bit by roasting our peppers and corn. It adds a slightly smokey flavor and definitely enhances an already delicious salsa!

I love the flavor of roasted peppers. From poblanos to bell peppers, to jalapenos. It reinforces the flavor I love from a pepper without going overboard on the heat!
To roast peppers for our chili corn salsa recipe, you'll just need a sheet tray!
Tips and Tricks for Roasting Jalapenos
If you don't like it too spicy, before roasting slice the jalapenos in half and remove the seeds. This will take out a lot of the spice!
Roast until you see a slight char on the outside of the pepper. That equals tons of flavor!
Finely dice after roasting them and add them to salsas or tacos!
Is this Chili Corn Salsa Healthy?
Yes! A simple list of ingredients, it's loaded with fresh veggies and is light and healthy. A great snack to keep on hand!

How To Store Salsa
To store my roasted chili corn salsa I like to put it in a mason jar or airtight Tupperware container.
This stores well in the fridge for up to a week! But I doubt it'll last that long!
What To Serve With It
I like some corn chips to go along with this copycat Chipotle salsa. Regular tortilla chips scoops or even a Frito-style corn chip would be delicious.
This also goes so well on tacos and burritos, obviously!
I would serve it over my Nacho Black Bean Burgers or Shrimp Burrito Bowl.
Corn Chile Salsa (Chipotle Copycat Recipe)
- 1 15 oz can of corn white or yellow
- 1 jalapeno
- ½ a large red onion finely diced
- 2 tablespoons lime juice
- ¼ cup cilantro chopped
- ½ teaspoon salt
- Preheat the oven to 400 degrees and cut your jalapeno in half.
- Place on a baking sheet and roast for 10 minutes.
- While that is roasting, drain the can of corn, dice the red onion, and cilantro.
- Place corn, red onion, cilantro, salt, and lime juice in a medium mixing bowl.
- When the jalapeno is done roasting, finely chop and add to the mixing bowl.
- Mix the corn and chile salsa well and add more salt if desired.
- Serve with chips!
