Pretzel Pepita Power Bars

"Gourmet" is the exact word my husband used to describe these Pretzel Pepita Pantry Power Bars! It's a decadent mix of salty & sweet and its the BONUS BLOG for this week. I usually stick to posting one blog, but after making these bars and seeing how popular they were in my house (aka my husband scarfed them ALL) I had to share!

If a nature bar, a protein bar, and my snack cabinet had a baby…it would be these. Times of necessity sparks innovation and we had no granola bars. I literally mixed everything we had (including TWO types of chocolate covered pretzels) into a bar, let them firm up and voila!

I also included a scoop of protein powder, superfood chia seeds, ground flax seed, and oats to balance the richness of the dark chocolate. By mixing all of these ingredients into the dark chocolate it helps it firm up. It has anything you could want in a power bar, it keeps you full, tastes amazing, and they are homemade.

Can we also talk about how power bars are upwards of $6-$8 at the grocery store?! You could buy all of these ingredients and make them for HALF that amount per batch. OR substitute for things you may already have in your pantry. These are very forgiving and as long as you have a few key ingredients, they should hold up well. So lets do it!

Ingredients
  • 8 oz dark chocolate chips.
  • 1 cup oats
  • 1 scoop of your favorite protein powder (This is mine!)
  • 2 tablespoons ground flax seed
  • 1 tablespoon coconut oil
  • 2 cups crushed pretzels or chocolate covered pretzels
  • 1/4 cup pepitas (roasted pumpkin seeds!)
  • 2 tablespoons chia seeds
INSTRUCTIONS
  1. In a microwave safe bowl add in the chocolate chips and coconut oil. Microwave in increments of 30 seconds until melted.
  2. Stir in protein powder, oats, and flax seed.
  3. Pour into a greased 8x8 pan
  4. Sprinkle the top with pretzels, pepitas, and chia seeds. Gently press down until they stick into the chocolate
  5. Pop it into the refrigerator to firm up for 30 minutes. Cut into bars and enjoy!

For best results, we kept them in the refrigerator in an airtight container. I hope you love these as much as I do!

Ingredients
